Summer is in full swing, and what better way to celebrate than with light, refreshing recipes featuring our freshly harvested vegetables? To kick off July on a delicious note, we share a tasty and vibrant combination: Tomato & Broccoli Salad with Gruyère and Fresh Flat Parsley.
This recipe blends the crispness of broccoli with the sweetness of Normandy tomatoes and smooth Gruyère cheese, all elevated by the aromatic flavor of our flat parsley.
Ingredients (Serves 4):
- 4 fresh tomatoes
- 1 small head of broccoli
- 150g Gruyère cheese
- 1 bunch of Gosselin flat parsley
- For the dressing: 3 tbsp olive oil, 1 tbsp Normandy cider vinegar, salt, and freshly ground pepper.
Quick Preparation (10 minutes):
- Vegetables: Wash the tomatoes and cut them into wedges. Separate the broccoli into small florets (enjoy them raw for extra crunch, or blanch for 2 minutes in boiling water).
- Cheese: Dice the Gruyère into small, even cubes.
- Fresh Herb: Rinse and finely chop the Gosselin flat parsley.
- Dressing: In a salad bowl, whisk together the olive oil and cider vinegar for a light dressing. Add all ingredients, toss gently, and serve chilled!
Enjoy your meal and have a delicious summer with Gosselin Group!
